Which Fire Stick should run the player?

Three generations are still in circulation and they are not interchangeable. The Fire TV Stick 4K carries 1.5 GB of RAM and a 1.7 GHz quad-core chip on Wi-Fi 5. The 4K Max carries 2 GB, a 1.8 GHz chip, Wi-Fi 6 and adds AV1 hardware decode. RAM is the spec that shows up daily, because a player app holds the whole visible channel list in memory and rebuilds the guide from it. The non-4K sticks decode 1080p cleanly and will not output above it whatever the source sends. If you are buying hardware specifically to run a player against a large catalog, that extra half gigabyte changes more than any tier name on the packaging.

Hardware or software decoding, and which comes first?

Set hardware decoding first and switch only where a specific channel refuses it. Hardware decode hands the work to the GPU block, which is why a 4K HEVC feed runs cool while a software decode of the same feed heats the stick and drops frames. Some buffering is capacity on the provider side, and no local change touches it. Does the player app change picture quality on a Fire Stick?
Not on its own. The app fetches segments and hands them to the same Fire OS media pipeline every app on the device shares, so decoding and HDR mapping happen below the app layer. What a player genuinely controls is the guide, recording, group management, and the decoder and buffer toggles it exposes. Two players fed the same line usually produce the same picture and feel completely different to navigate. If you want a sharper image, the levers are the source bitrate, the codec and your connection, not the app icon.
Is a 4K Max worth the extra money over the standard 4K stick?
For a large channel list, yes, and the reason is memory rather than resolution.
